It was the year of 1824 when distilling was legalized by Scotland through passing Scottish Excise Act of 1824, after lapse of one-year Macallan was started by school teacher named Alexander Reid who was also barley farmer. At beginning it was just a distillery named Macallan then it became most famous and expensive whiskey producers in world. Name Macallan is combo of two words ‘megh’ means fertile land which is derived from Gaelic and ‘Ellan’ corresponds to honour of 18th century monk Fillian who was monk in church of estate on which distillery was located.
Distillery was owned by different persons after death of Alexander when died in 1848, most notably it was bought by Rodrick kemp in 1892 and remained in hands of kemp family for several decades, it was expended in 1960s and found new capital for investment. Most importantly kemp family introduced single malt whisky, it is most famous product till today and Macallan became known for single malt whiskey.
Erdington group bought Macallan in 1999 and still owns today, production boosted in following years, in 2018 new distillery was opened and also new visitor centre.
Casks of Macallan are made in unique way, they have post named master of wood whose role is to look after production of casks, current master of wood is Stuart Macpherson, oak from forests of Spain in northern area is identified and collected by master of wood, then it is dried and it is ensured that moisture is reduced. To ensure quality of flavour, not like other distillers Macallan uses sherry casks instead of American oaks. Copper-pot stills are another feature of Macallan production which reduces surface area contact between copper and alcohol due to which heat of the process is increased in a result more intense distillate is got.
